The tastiest kunafa in an unconventional version... In this recipe, we replaced the traditional kneading with breadcrumbs, and we’ll bake the tray in the oven for half an hour instead of turning it over the stove!

Ingredients

  • 2 large cups breadcrumbs or ground tea biscuits
  • 2 tablespoons melted butter
  • A pinch of orange blossom water and rose water
  • Ghee, for greasing the tray
  • For the filling:
  • 6 pieces (blocks) mozzarella cheese
  • 300 ml milk
  • 300 ml heavy cream
  • A pinch of rose water and orange blossom water
  • A pinch of vanilla
  • 2 cups fine semolina or farina
  • Butter or ghee, for the top

Method

  1. Mix the breadcrumbs (i.e., ground cake) with the butter and knead well, then add rose water and orange blossom water and knead again.
  2. Grease the baking tray with a little ghee and press the kneaded breadcrumbs into the bottom, reserving a small amount for later use.
  3. Slice the mozzarella into wide rounds about 1 cm thick and arrange them over the breadcrumb layer.
  4. Put the milk and cream in a pot with vanilla and rose and orange blossom waters and stir over medium heat.
  5. When the mixture begins to boil, reduce the heat and gradually add the fine semolina while stirring.
  6. When the mixture thickens after a few minutes (with stirring), remove the pot from the heat and spread its contents evenly over the cheese.
  7. Sprinkle the reserved breadcrumb mixture over the top.
  8. Dot the breadcrumb surface with pieces of butter or ghee and place the tray in the oven at 200°C (center) for about 25 to 35 minutes, monitoring.

  9. Remove the tray from the oven and let it rest for only a few minutes, then invert it onto a larger serving plate or tray.
  10. Serve the cheese kunafa immediately with cold syrup (qatir/shira) at room temperature, prepared in advance.
