How to Make Safouf Dessert
Safouf is one of the most well-known Arabic dessert recipes. Its flavor and color depend mainly on turmeric or yellow coloring, which must be of high quality to achieve the desired result.

- 3 cups all-purpose flour
- 1 cup fine semolina
- 1 cup powdered milk
- 1 and a half cups sugar
- 2 tablespoons baking powder
- 2 tablespoons turmeric or yellow food coloring
- 3 cups water
- 1/2 cup vegetable oil
- 1 tablespoon rose water
- 2 tablespoons yogurt (optional)
- Grease the baking pan with tahini, butter, or oil, pour in the Safouf batter, then garnish with pine nuts, almonds, or a mixture of nuts according to preference.
- Ensure the Safouf is cooked through in the center so it does not remain doughy inside while the outside is done.
Method
- Mix the liquid ingredients, then add the sugar and whisk well until the sugar dissolves completely... add the yogurt and whisk well.
- Add the dry ingredients gradually, continuing to mix. Add the rose water, and you can increase or reduce the amount as desired.
- Mix everything together to get a soft but homogeneous batter.
- Grease a baking tray with tahini, butter, or oil, then pour in the safouf mixture and decorate it with pine nuts, almonds, or a mixed nuts topping, as desired.
- Place the safouf tray in an oven that has been preheated to 180 degrees.
- Place the tray on the middle rack of the oven. Leave the safouf in the oven for about an hour, or حسب the oven's strength, until it is cooked through and dry.
- Be sure the safouf is fully cooked from the inside so it does not become doughy before the outside is done.
