  • 3 eggs
  • 3 cups flour
  • 1 and 3/4 cups sugar
  • Half a cup fine semolina
  • 1 tablespoon baking powder
  • 1/2 teaspoon instant yeast
  • 1/2 cup oil
  • 1 cup milk
  • 1 tablespoon white vinegar
  • 1/2 teaspoon vanilla
  • A pinch of salt
  • 1/2 tablespoon turmeric

Method

  1. Beat the eggs with the vanilla, then gradually add the sugar while stirring continuously. Beat the mixture until the batter turns white....
  2. Add the oil and keep beating... Sift the flour and baking powder aside with the semolina, salt, and yeast, then add them alternately with the milk until you use up the full amount.
  3. Mix the turmeric with a little hot water and pour the turmeric mixture over the rest of the ingredients. Beat well, then add the vinegar at the end and mix the batter one last time with a wooden spoon.
  4. Pour the batter into an oven tray and bake the safouf in a preheated oven at 180 degrees for about 35 minutes, or depending on your oven, until the batter is cooked through, rises slightly, and turns golden.
