Ingredients

  • 1 onion, chopped
  • 1 cup beetroot, cut into cubes
  • 1 cup carrots, cut into cubes
  • 1 tablespoon tomato paste
  • Salt + black pepper
  • 1 cup cabbage, thinly sliced
  • 1 1/2 cups beef stock
  • 1/2 cup dill

Method

  1. In a deep pot, start by sautéing the onion in a little vegetable oil until it softens completely.
  2. Add the beetroot cubes and stir for a few minutes, then add the carrots and continue stirring the ingredients.
  3. After that, add the potatoes cut into cubes as well, then add the tomato paste and mix the ingredients well.
  4. Add the beef stock in the needed amount, noting that you should not add too much stock because we still need to see how much water the cabbage will release later.
  5. Add the chopped cabbage and stir the ingredients for a while.
  6. When the ingredients of the Russian borscht soup are cooked, sprinkle a little dill on top.
  7. Leave the mixture for a few minutes, then turn off the heat.
  8. Serve the Russian borscht soup with an extra sprinkle of dill for garnish and a spoonful of sour cream, as shown in the accompanying image.
