Ingredients

  • Bone-free chicken pieces, boiled
  • 2 cups basmati rice
  • 2 tomatoes
  • 1 onion
  • A pinch of ground cumin
  • A pinch of sweet red pepper, paprika
  • A pinch of ground ginger
  • A pinch of ground cinnamon
  • Salt
  • 1 tablespoon tomato paste
  • A few saffron threads

Method

  1. Wash the chicken pieces well and boil them with aromatics such as bay leaves, nutmeg, cinnamon sticks, and whole cloves...
  2. Wash the rice and leave it soaking in water for 15 minutes.
    Timers: 15 min
  3. Fry the finely chopped or grated onion in a little vegetable oil, then add the grated tomato and sauté them together.
  4. After a few minutes, add the tomato paste with one cup of water.
  5. Add the assorted spices and let them simmer for a while, then add the boiled chicken and let the chicken simmer in the broth for some time to absorb the different flavors.
  6. Finally, add the soaked rice and the crushed or lightly pounded saffron strands. Stir the rice for a few minutes, then cover it with water and leave the mixture to simmer over low heat until the rice is fully cooked.
  7. When the rice is cooked, transfer the mixture to a serving dish and garnish it with nuts as desired...
