Ingredients
- Bone-free chicken pieces, boiled
- 2 cups basmati rice
- 2 tomatoes
- 1 onion
- A pinch of ground cumin
- A pinch of sweet red pepper, paprika
- A pinch of ground ginger
- A pinch of ground cinnamon
- Salt
- 1 tablespoon tomato paste
- A few saffron threads
Method
- Wash the chicken pieces well and boil them with aromatics such as bay leaves, nutmeg, cinnamon sticks, and whole cloves...
- Wash the rice and leave it soaking in water for 15 minutes.Timers: 15 min
- Fry the finely chopped or grated onion in a little vegetable oil, then add the grated tomato and sauté them together.
- After a few minutes, add the tomato paste with one cup of water.
- Add the assorted spices and let them simmer for a while, then add the boiled chicken and let the chicken simmer in the broth for some time to absorb the different flavors.
- Finally, add the soaked rice and the crushed or lightly pounded saffron strands. Stir the rice for a few minutes, then cover it with water and leave the mixture to simmer over low heat until the rice is fully cooked.
