Ingredients
- 1 kg meat (shank cuts), suitable for boiling
- Seasonings for boiling the meat: dried onion, cinnamon stick, cloves, mastic resin, bay leaf
- 2 cups basmati rice
- minced meat
- baharat (seven-spice blend)
- ground cinnamon
- 2 tablespoons ghee (samna)
- water for boiling the meat
- salt
- nuts for garnishing the mansaf

Method
- Place the pieces of meat in water and add the seasonings along with the dry onion.
- When the water boils, skim off the scum and leave the pot covered on low heat until the meat is well cooked.
- In a second pot, heat a little ghee and add the ground meat, frying it well.
- Add 1 teaspoon of seven-spice mix and cinnamon, and stir the spices well with the ground meat.
- Add the rice after draining it and mix well with the ground meat, then add salt.
- Add the meat cooking liquid at a ratio of 2 cups water for every 1 cup rice.
- When the liquid boils and reaches the level of the rice, reduce the heat and cover the pot until the rice cooks…

- Turn the rice out onto a serving platter, arrange the large pieces of meat on top, and garnish the mansaf with nuts as desired.
