  • 1 kg meat (shank cuts), suitable for boiling
  • Seasonings for boiling the meat: dried onion, cinnamon stick, cloves, mastic resin, bay leaf
  • 2 cups basmati rice
  • minced meat
  • baharat (seven-spice blend)
  • ground cinnamon
  • 2 tablespoons ghee (samna)
  • water for boiling the meat
  • salt
  • nuts for garnishing the mansaf

Method

  1. Place the pieces of meat in water and add the seasonings along with the dry onion.
  2. When the water boils, skim off the scum and leave the pot covered on low heat until the meat is well cooked.
  3. In a second pot, heat a little ghee and add the ground meat, frying it well.
  4. Add 1 teaspoon of seven-spice mix and cinnamon, and stir the spices well with the ground meat.
  5. Add the rice after draining it and mix well with the ground meat, then add salt.
  6. Add the meat cooking liquid at a ratio of 2 cups water for every 1 cup rice.
  7. When the liquid boils and reaches the level of the rice, reduce the heat and cover the pot until the rice cooks…
  8. Basmati rice usually needs about 20 minutes.
