Method
- Sauté the onion in a deep pot suitable for soup with a little vegetable oil until it softens.
- Add the diced pumpkin and potato to the onion and stir all the ingredients well. Then add vegetable stock and salt, cover the pot and leave the mixture to boil until the pumpkin is fully cooked and tender.
- Blend the mixture with a blender, then return the soup mixture to the pot to reheat.
- Add 1 cup of cream to the soup, then ladle the soup into a serving bowl and sprinkle nutmeg and black pepper.
