Ingredients
- 1 kilo fine bulgur
- 1 kilo boiled potatoes
- 1 loaf bread
- salt
- ground cumin or cumin seeds
- black pepper
- dried mint
- The filling:
- minced meat
- 1 stick butter or ghee
- onion
- walnuts and labneh / optional
Method
- Soak the bulgur in water for about a quarter of an hour, then drain and squeeze it by hand.
- Boil the potatoes, then drain and mash them.
- Add the potatoes to the bulgur.
- Soak the bread loaf in a little water until soft, then drain it and add it to the potatoes and bulgur.
- Add salt, cumin, and mint to taste, mix well until the mixture is uniform, and set aside.
- Prepare the filling: put the meat in a pan over heat and stir it until it dries.
- Add salt and butter or ghee, let it melt, then add the chopped onion and stir.
- When the filling is cooked, add cumin, mint, walnuts, and labneh.
- Let the filling cool before stuffing the potatoes.
- Shape the potato mixture into patties, make a cavity in each one, fill each with a little filling, and seal.
- Fry the potato patties in plenty of hot oil until they just take on color—do not overdo it so they don't burst; they can also be grilled over charcoal.
- Note: You can freeze the potato patties in freezer bags until ready to fry.
