Ingredients
Start here, then move straight into the method.
- 1 kilo potatoes
- Minced meat
- Salt and spices to taste
- 1 onion
- 2 bunches frafkhin
- Sumac
- Olive oil
- Mozzarella cheese
Method
Follow the cooking sequence without leaving the page.
- Peel the potatoes, grate them, then squeeze them well to remove all the water.
- Season the potatoes with finely minced onion and qawarma fat or minced meat, salt, and spices to taste.
- Frafkhin: Wash the two bunches of frafkhin well after removing any unwanted leaves and trimming them, then place them in a colander. Season them with onion, sumac, olive oil, and salt.
- Roll out the dough and shape it into circles of any size you like.
- Fill each pastry as desired.
- Bake the frafkhin and potato pastries in a preheated oven at 180°C until cooked through and golden.
- Fry the mozzarella cheese pastries in plenty of hot oil.
