Ingredients
- 2 eggs
- A pinch of vanilla powder
- A dash of liquid vanilla - to taste
- 1 cup powdered sugar (fine)
- 2 cups flour
- 1 tablespoon baking powder
- 1 tablespoon dried cranberries - or amount as desired
- 1/2 cup shelled pistachios - or amount as desired
- Put the mixture in a pan greased with a little oil or butter.
- Bake the biscotti in a preheated oven at 180°C for up to 30 minutes or according to your oven's strength.
- Remove the biscotti from the oven and let it cool well, then slice it crosswise to the thickness you prefer.
- Arrange the biscotti slices on a baking tray and put them in the oven for 20 minutes.

Method
- Beat the eggs well with the vanilla. You can use only the powdered vanilla, or add liquid vanilla as well if you like.
- Add the powdered sugar while continuing to beat.
- Once the sugar has dissolved, add the sifted flour with the baking powder and continue mixing well.
- Add the dried cranberries and pistachios as desired. Mix the ingredients well using a wooden spoon or by hand.
- Place the mixture in a baking tray greased with a little oil or butter.
- Bake the biscotti in a preheated oven at 180 degrees for up to 30 minutes, or depending on your oven.Timers: 30 min
- Remove the biscotti from the oven and let it cool well, then cut it crosswise into slices of your preferred thickness.
