Ingredients

  • 2 eggs
  • A pinch of vanilla powder
  • A dash of liquid vanilla - to taste
  • 1 cup powdered sugar (fine)
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon dried cranberries - or amount as desired
  • 1/2 cup shelled pistachios - or amount as desired
  • Put the mixture in a pan greased with a little oil or butter.
  • Bake the biscotti in a preheated oven at 180°C for up to 30 minutes or according to your oven's strength.
  • Remove the biscotti from the oven and let it cool well, then slice it crosswise to the thickness you prefer.
  • Arrange the biscotti slices on a baking tray and put them in the oven for 20 minutes.

Method

  1. Beat the eggs well with the vanilla. You can use only the powdered vanilla, or add liquid vanilla as well if you like.
  2. Add the powdered sugar while continuing to beat.
  3. Once the sugar has dissolved, add the sifted flour with the baking powder and continue mixing well.
  4. Add the dried cranberries and pistachios as desired. Mix the ingredients well using a wooden spoon or by hand.
  5. Place the mixture in a baking tray greased with a little oil or butter.
  6. Bake the biscotti in a preheated oven at 180 degrees for up to 30 minutes, or depending on your oven.

  7. Remove the biscotti from the oven and let it cool well, then cut it crosswise into slices of your preferred thickness.
  8. Arrange the biscotti slices on a baking tray and return them to the oven for 20 minutes.
