Ingredients
- 1 large fish
- For the marinade:
- A pinch of garlic powder
- A pinch of ground ginger
- Chopped fresh coriander
- Ground cumin
- Lemon juice
- Olive oil
- To add during grilling:
- Onion
- Potato
- Tomato
- Colored sweet pepper
- 1 tablespoon salt
- 1/2 cup vegetable oil
- 3 tablespoons ground cumin
- 1 tablespoon fresh or ground ginger
- 1 teaspoon black pepper
- 1/2 cup chopped fresh coriander
- 8 garlic cloves
- Hot pepper
- Water
Method
- Wash the fish well and leave it to drain.
- Season the fish and set it aside for a while.
- Cut the onion, potato, tomato, and colored sweet pepper into round slices and place them in the bottom of an oven tray.
- Add the oil, salt, cumin, ginger, pepper, chopped coriander, minced garlic, hot pepper, and lemon juice, and mix all the ingredients together.
- Place the seasoned fish in the tray and mix it with the ingredients in the tray.
- Add 1 cup of water to the tray, then cover it with aluminum foil or leave it uncovered.
- Place the tray on the middle rack of the oven over high heat.
- When the fish is cooked, turn on the top heat and brown it.
