Ingredients

  • 1/2 cup orzo pasta
  • 1 boneless chicken breast
  • 1 carrot, diced small
  • 1 celery stalk, chopped
  • 1 clove garlic, minced
  • 1 small onion, diced small
  • 1 bay leaf
  • 4 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon butter

Method

  1. Put the onion with a little olive oil in a pot over heat and sauté until soft
  2. Add the chicken cut into small cubes and stir
  3. Add a bay leaf
  4. When the pink color of the chicken disappears, add the carrots, celery, and garlic and stir
  5. When the vegetables begin to wilt — i.e., after two or three minutes — add the chicken cooking broth and cover the pot
  6. After boiling for about 7 minutes, add the pasta with lemon juice, butter, and salt and stir
  7. Cover the pot and leave it on low heat until the pasta is well cooked
  8. Serve the orzo pasta soup hot
