Ingredients
- 1 1/2 cups yogurt
- 1 cup sugar
- 1/2 teaspoon baking soda
- 3 tablespoons butter
- 3 cups semolina
- 2 teaspoons baking powder
- 2 tablespoons orange blossom water
- nuts for garnish
- Syrup:
- 2 cups sugar
- 1 cup water
- 2 bay leaves and 2 sprigs of green marjoram - optional
- 1/4 teaspoon citric acid
- 1 teaspoon butter
- Note:
- We decorate the namoura with nuts before placing it in the oven... or with shredded coconut and ground pistachios after baking and after pouring the syrup.

Method
- First, prepare the syrup: put the sugar, water, marjoram and aromatic flavoring in a pot, stir slightly, then place over the heat.
- When the syrup boils, add the lemon juice and let it boil briefly before adding the butter... stir and then turn off the heat.
- Leave the syrup aside.
- Rub the semolina with the butter, then add the baking powder and mix well.
- In another bowl, dissolve the sugar in the yogurt, add the bicarbonate (baking soda) and mix.
- Pour the yogurt mixture over the semolina mixture, then add the orange blossom water and mix well.
- Grease the pan with butter and spread the namoura mixture to a thickness of 1 centimeter.
- Let the namoura rest for only half an hour.
- Cut the namoura in the pan and decorate with almonds or pistachios or as desired.
- Bake in a preheated oven at 180–200°C for about 20 minutes or until cooked.
- Brown the top of the namoura, then pour lukewarm syrup over it while still hot.
- Let the namoura cool before serving.
