- 1 1/2 cups kataifi shreds or fine semolina, or any chicken flour
- 1/2 cup ghee or butter
- 1 tablespoon orange blossom water
- 1 tablespoon rose water
- 1 cup sugar
- 1 1/2 cups hot water
Method
- Put 1 cup of sugar in a non-stick pan on the stove until it caramelizes.
- Add hot water over the caramelized sugar, stir and set the mixture aside.
- In another non-stick pan, brown the shredded kunafa or farikha flour, and when browned add the ghee or butter and stir.
- Add the caramel mixture (sugar and hot water) you prepared in the first step and stir to obtain a sticky dough.
- Add orange blossom and rose water, stir and then remove the mafroukeh dough from the heat immediately.
- Spread the mafroukeh in the serving dish after brushing it with oil; after it cools well distribute the fresh cold ashta on top.
- Garnish the ashta with nuts and serve.
