- 1½ cups fine semolina
- 1½ cups Farikha flour
- ½ cup powdered sugar
- ¾ cup ghee or soft butter
- ½ cup lukewarm water
- 1 tablespoon instant yeast
- 2 tablespoons yogurt
- 2 tablespoons rose water
- 2 tablespoons orange blossom water
- Filling:
- ½ kg date paste - you can grind regular dates after removing the pits
- 100 g soft butter
- A pinch of cinnamon
- 1 medium spoon orange blossom water
- 1 medium spoon rose water

Method
- Mix all the dough ingredients well and set aside until preparing the filling.
- Mix the filling ingredients well until you have a single soft mass.
- Roll out half the dough in a baking tray without greasing it. Make sure to spread a thin layer, knowing that it will puff up slightly during baking.
- For the second layer, spread the date filling; you can use a rolling pin to thin it, then place it over the first layer. Then place the second half of the dough over the dates, again ensuring it is a thin, even layer; you can moisten your hands with a little water to help spread it.
- Place the rolled date maamoul tray in a preheated oven at 180°C on the middle rack.
- When the maamoul tray starts to take some color, turn on the top heat of the oven so it finishes baking.
