How to Make Lemon Cupcakes

Ingredients

• 4 eggs
• 1/2 cup vegetable oil
• 1/2 cup lemon juice
• 2 tablespoons lemon zest
• 2 cups sugar
• 3 cups sifted flour
• 3 teaspoons baking powder
• 1 teaspoon vanilla

Method

1. Beat the eggs with the vanilla and lemon zest well...
2. Add the lemon juice to the egg mixture and beat well, then add the oil, then the sugar and the remaining ingredients gradually.
3. Pour the batter into muffin or cupcake liners that have been lightly sprayed with oil
4. Bake the lemon cupcakes in a preheated oven at 180°C for 35 to 40 minutes depending on oven strength and heat, but as soon as the cupcakes are cooked and risen you can remove them from the oven
