Ingredients

  • 4 cups sugar
  • , 2 cups water
  • 1 cup cornstarch
  • 1 tablespoon rose water
  • 1 tablespoon ground mastic
  • Flavors as desired:
  • lemon, rose, pomegranate, frez or strawberry
  • 1/2 teaspoon citric acid

Method

  1. Put the sugar and water on the heat until they begin to boil.
  2. Add the starch dissolved in a cup of water and stir the mixture continuously until it thickens.
  3. When the sugar and water begin to boil, add citric acid (or lemon salt) according to the name used in your area.
  4. Ensure the mixture is cooked after about 25 minutes on the stove: how?
  5. By placing a teaspoon of the mixture in a glass of water; if it remains a single lump, the mixture is done.
  6. Then add the ground mastic or any flavor you prefer, add rose water and stir well, then turn off the heat.
  7. Food coloring is optional and depends on the color you want or the flavor you choose.
  8. Pour the mixture onto parchment paper brushed with a little vegetable oil.
  9. Generously sprinkle corn starch mixed with powdered sugar over the Turkish delight mixture.
  10. Let the Turkish delight cool well at room temperature, then turn it out into another bowl or onto parchment paper and also sprinkle the powdered sugar-and-starch mixture on the other side.
  11. Cut the Turkish delight into squares or as desired and coat them on all sides with the starch-and-sugar mixture, and serve them alone or as a tasty filling between two plain biscuits.
