Homemade qatayef batter... one of those recipes we never get tired of

Ingredients

  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons sugar
  • 1/4 teaspoon yeast
  • 1 1/4 cups lukewarm water, or as needed
  • Note:
  • Keep the heat at medium under the skillet after it has heated well.

Method

  1. Put the dry ingredients together and whisk them with a balloon whisk... then make a well and add the water gradually while continuing to whisk until the mixture is smooth and homogeneous
  2. Heat a nonstick skillet over the stove until well hot, then pour a large tablespoon of the homemade qatayef batter and repeat until all the batter is used
  3. All the bubbles must appear in the batter before lifting it from the skillet
  4. Place the cooked batter on a clean plate and cover it with a clean cloth so the batter stays moist and doesn't dry out
  5. Fill the homemade qatayef with the previously prepared cold clotted cream
  6. After the skillet heats well, the heat should be set to medium
  7. After cooking every four or five qatayef, wipe the skillet with a clean damp cloth to remove impurities and batter residues stuck to the skillet, then continue
