How to Make Homemade Qatayef Batter
A reliably successful and very delicious homemade qatayef batter. Try it and fill the qatayef with chilled clotted cream prepared in advance. Qatayef is a light Arabic sweet :)

Homemade qatayef batter... one of those recipes we never get tired of
Ingredients
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons sugar
- 1/4 teaspoon yeast
- 1 1/4 cups lukewarm water, or as needed
- Note:
- Keep the heat at medium under the skillet after it has heated well.

Method
- Put the dry ingredients together and whisk them with a balloon whisk... then make a well and add the water gradually while continuing to whisk until the mixture is smooth and homogeneous
- Heat a nonstick skillet over the stove until well hot, then pour a large tablespoon of the homemade qatayef batter and repeat until all the batter is used
- All the bubbles must appear in the batter before lifting it from the skillet
- Place the cooked batter on a clean plate and cover it with a clean cloth so the batter stays moist and doesn't dry out
- Fill the homemade qatayef with the previously prepared cold clotted cream
- After the skillet heats well, the heat should be set to medium
- After cooking every four or five qatayef, wipe the skillet with a clean damp cloth to remove impurities and batter residues stuck to the skillet, then continue
