Ingredients
- 1 bunch fresh green hendbeh (dandelion greens)
- 1 onion (dry)
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 sweet or hot pepper - as desired
- Salt
- A pinch of black pepper
- 1 tablespoon vegetable oil
Method
- Wash the dandelion greens, chop them, then soak them in water with salt and vinegar for several minutes to remove any dirt and make sure they are thoroughly clean.
- Place a deep pot over the heat and add water, salt, and 1 tablespoon of baking soda.
- Once the water comes to a boil, add the dandelion greens and let them cook until tender.
- Transfer the boiled dandelion greens to a colander to drain off the water, and let them cool.
- Put the oil in a wide skillet and fry the onion until softened, then add the minced garlic, not mashed garlic, and stir the onion and garlic until softened.
- Add the pepper, then add the dandelion greens after squeezing out the water.
- Stir the dandelion greens with the onion, garlic, and pepper, then add salt, black pepper, and crushed hot pepper to taste. Let the mixture cook for 5 minutes, then add the lemon juice and turn off the heat.Timers: 5 min
