How to Make Date Cookies - With Photos

- Half a kilo of white flour
- Half a kilo of farikha flour - fine semolina
- 2 tablespoons ground cardamom pods
- 1/2 cup butter
- 1 cup ghee
- 1 tablespoon ground mahaleb
- 1 teaspoon ground mastic
- Half a kilo of ground dates
- 4 tablespoons sugar
- 1 tablespoon vanilla
- 2 cups liquid milk, or as needed for the dough
- 2 tablespoons ka'ak spice or ka'ak seasoning
Method
- Heat the ghee and butter over the stove until they are completely melted.
- Place the semolina in a deep bowl, then rub it with the butter and ghee, and let it sit for 15 minutes.Timers: 15 min
- Add all the ingredients to the bowl except the sugar and milk.
- Dissolve 1 cup of the sugar in the milk. Knead the mixture with the milk until well combined, and if you feel the dough needs more milk, you can add more. Then let the dough rest for 30 minutes.Timers: 30 min
- Add 1 teaspoon of nutmeg or ground cardamom to the dates and rub it well with 1 tablespoon butter... Cut the dough into small pieces, then place date balls inside the dough pieces and seal them well.
- Place the dough in the maamoul mold and press it to take the shape you want, as shown in the accompanying photos.
- Place the date cookies on a suitable baking tray, then put them in the oven at 180 degrees until browned and cooked through.
