Date brioche is one of those delicious recipes that works for breakfast, dessert, or even a snack ... I love serving dates to children, and this method is wonderful and suitable
Ingredients
- 4 and a half cups flour
- 1 tablespoon active dry yeast
- 1/4 cup vegetable oil
- 1/4 cup yogurt
- 1/4 cup milk
- 2 eggs
- 1 small spoon vinegar or liquid vanilla
- 1/2 cup sugar
- 100 grams butter
- A pinch of salt
- Filling:
- 500 grams dates
- 2 tablespoons soft butter
- A pinch of cinnamon
- A pinch of ground anise
- A handful of chopped walnuts - optional
- Glaze:
- 1 egg + 1 tablespoon milk + 1 teaspoon vinegar
- or
- liquid vanilla + a pinch of Nescafe
- For decoration:
- Sesame seeds
Method
- Mix the dry ingredients, then start adding the liquid ingredients gradually and knead everything together until you get a cohesive dough
- Let it rest for one hour
- Meanwhile, prepare the filling... mix the butter, cinnamon, anise, and walnuts with the pitted dates (grind the dates first if they are not soft)
- Divide the dough into equal balls... then roll each piece with a rolling pin into a round shape
- Take a piece of the date filling and shape it lengthwise into a rope or finger
- Wrap the dough around the date piece to make a roll... then join the ends together to get a round brioche piece with an empty center
- Repeat the same method with all the dough pieces
- With a knife, cut the outer edges of the dough (as shown in the picture) so the piece looks like a flower
- Brush the top of the dough with the glaze mixture and sprinkle with sesame seeds
- Let the pieces rest again for 15 minutesTimers: 15 min
- Line the tray with parchment paper or grease it with a little oil and place the brioche on it
- Bake in a 180°C oven for 30 minutes or according to your oven's strength.. then brown the topTimers: 30 min
- Serve the brioche at room temperature
