  • 4 eggs
  • 1 tablespoon vinegar
  • 1 tablespoon vanilla
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 cup juice or liquid milk
  • 2 cups sifted flour
  • 2 tablespoons baking powder
  • A pinch of salt

Method

  1. Beat the eggs with the vanilla and vinegar well.
  2. Add the sugar and oil and continue beating.
  3. Add the juice or liquid milk, as desired and depending on what we have available. Any flavored juice can be used, whatever flavor we want.
  4. Beat the ingredients for about 5 minutes, then add the sifted flour, baking powder, and salt, and continue beating. If we want chocolate muffins or cupcakes, reduce the flour by 2 tablespoons and replace them with cocoa. Add the flour gradually to the mixture while continuing to beat.

  5. Pour the mixture into muffin cups or cupcake molds, or into a special cupcake tray. Fill the cups to about half full so there is room for the cake to rise while baking?
  6. Place the tray in a preheated oven for about 20 minutes, or until the cupcakes rise and are cooked through.
    Timers: 20 min
  7. This quantity is enough to make 8 cupcakes.
