Ingredients

  • 1 cup coarse bulgur
  • Parsley
  • Mint
  • 4 tomatoes
  • Green onion
  • Dry onion
  • 2 tablespoons tomato paste or concentrated tomato sauce
  • 1 tablespoon pepper paste
  • Olive oil
  • 1 teaspoon ground cumin
  • 1 tablespoon pomegranate molasses or lemon juice to taste
  • Meanwhile, finely chop the parsley, mint, and green onion

Method

  1. First, wash the bulgur well with hot water.
  2. Finely chop the onion, then sauté it in olive oil or ghee.
  3. When the onion wilts, add the bulgur and stir with the onion, then add 1 tablespoon tomato paste and the pepper paste and mix well.
  4. Add 1 cup of water... when the mixture comes to a boil, reduce the heat and let it simmer until the bulgur is cooked.
  5. Once the ingredients are cooked, add the salt and cumin, then remove from the heat and set aside until the Itch cools.
  6. Meanwhile, finely chop the parsley, mint, and green onions.
  7. When the bulgur mixture has cooled, add the chopped herbs on top and mix well.
  8. Finally, add the olive oil and pomegranate molasses, or substitute lemon juice if desired.
