Honeycomb (Beehive) with Kunafa Filling
We've tried honeycomb with several fillings, but this honeycomb with kunafa filling remains the tastiest and most delicious of all. The dough is easy to make, but it takes some time to prepare both the dough and the cheese filling.

- 1 kilogram white flour (all-purpose)
- 1/2 cup sugar
- 2 tablespoons butter or ghee
- 1 1/4 cups yogurt
- 2 eggs
- 1/3 cup vegetable oil
- 1 tablespoon white vinegar
- 1 teaspoon baking powder
- 1 tablespoon instant yeast
- 2 tablespoons powdered milk
- 1/2 teaspoon mahleb
- a pinch vanilla
- 1/4 cup warm water
- Akkawi cheese block
- 1 cup mozzarella cheese
- a small cup of fine semolina
- 1/2 cup syrup
- 1 tablespoon rose water
- 1 tablespoon orange blossom water
- sesame seeds
- Note: You can add more yogurt depending on the flour type and the dough's needs. Also if Akkawi cheese is not available, you can substitute with extra mozzarella cheese.
Method
- Put the yeast with warm water and a spoon of sugar and wait until bubbles appear.
- Place the flour in the mixer with all the dry ingredients (or knead by hand if a mixer is not available), then add the butter and run for 2 minutes until the flour particles are coated with butter.Timers: 2 min
- Add the egg and vinegar to the yogurt and beat well, then add the yogurt mixture to the flour and knead for 7 minutes at medium speed...Timers: 7 min
- Finally add the oil and knead the dough to remain soft; let it ferment for about two hours...
- Prepare the unsalted akawi cheese and melt it in a double boiler. Add 1 cup mozzarella with 1/2 cup syrup and orange blossom water and rose water and mix the cheese well.
- Add the fine semolina and let the cheese mixture cool.
- Roll pieces of dough into circles, fill them with a little cheese, seal them, turn them over and place them in an oven tray.
- Let the dough and cheese circles ferment for about 3 hours. After that brush the cheese circles with jallab syrup and sprinkle sesame on them.Timers: 180 min
- Bake the honeycomb in a preheated hot oven at 180°C for 10 minutes to brown on both sides. If desired, you can brush the dough with syrup or honey as well.Timers: 10 min
- Note: You may add more yogurt depending on the type of flour and the dough's needs. Also if akawi cheese is not available, you can replace it by increasing the amount of mozzarella cheese.
