Homemade Shaibiyat — a reliable recipe

Ingredients

  • 10 sheets ready-made filo (phyllo) pastry
  • 100 g butter
  • For the cream (qeshta):
  • 2 tubs of qeshta (clotted cream) or qimar
  • 4 tablespoons cornstarch
  • 2 cups liquid milk
  • 1 tablespoon rose water or orange blossom water
  • Zest of 1 lime (optional)
  • Melted butter for brushing the Shaibiyat
  • Candied orange/lemon peel jam for garnish

  • Syrup (simple sugar syrup) for serving

Method

  1. Start by preparing the qeshta: whisk the qeshta (clotted cream), cornstarch and milk together in a small saucepan while cold. Then place over low heat and stir constantly until the mixture thickens.
  2. Add the rose water or orange blossom water and whisk to combine. Remove from the heat and let the cream cool at room temperature, then chill in the fridge until ready to use.
  3. Lay the filo sheets stacked on top of each other. Begin folding the pastry from one end into a triangle shape and use a pizza cutter or scissors to cut the first triangle. Continue the same way to obtain 12 triangles of equal size.
  4. Place half of the triangles on a parchment-lined baking tray in a large oven pan.
  5. Grate a little lime zest over the cream just before using. Fill each pastry triangle generously with cream in the center, then fold and seal the triangle.
  6. Brush the top and bottom of each Shaibiyat piece with melted butter using a pastry brush.
  7. Bake in a preheated oven at medium heat: 10 minutes with bottom heat, then 5 minutes with top heat.
    Timers: 10 min, 5 min
  8. Remove from the oven when they turn the desired golden color.
  9. Let the Shaibiyat cool to room temperature.
  10. Decorate with candied citrus peel jam and crushed pistachios as desired, and serve with syrup.
