Recipe story
Crepes — easy and kids will love them.
Ingredients
- 1 egg
- 1 tablespoon softened or melted butter
- A dash of vanilla
- 1 tablespoon sugar
- A pinch of salt
- 1 cup flour
- 2 cups liquid milk (or slightly less, as needed)
- Chocolate for filling the crepes
- To make homemade pancakes see: Homemade Pancakes
Method
- Whisk the egg with the butter, vanilla, sugar, and salt until the sugar dissolves
- Add the milk and flour and stir well with a whisk or spoon... the important thing is to avoid lumps of flour. The batter should be slightly runny
- In a hot pan, add a drizzle of oil and pour about one tablespoon of the crepe batter
- Quickly, hold the pan by the handle and tilt and rotate it to spread the batter across the pan so you get a very thin disk
- When it cooks on the first side, flip the disk to the other side to color slightly without overdoing it; the disk needs about a minute or less on each side
- Repeat the process until all the batter is used and stack the crepes on top of each other
- Let the crepes cool, then fill them with chocolate, roll them up, and serve
