Recipe story
Grilled meat marinade to achieve very tender, very flavorful meat.
Ingredients
- 1 kilogram of meat, cut into medium-sized cubes
- 1/4 cup olive oil
- 2 tablespoons white vinegar
- 6 onions, cut into quarters
- 3 tomatoes, cut into quarters
- 2 green or mixed-color bell peppers, cut into quarters
- 1 teaspoon ground cinnamon
- 1/2 teaspoon special grill spice mix
- 1/2 teaspoon black pepper
- 1/2 teaspoon mixed spices
Method
- Place the meat pieces in a bowl and add all the ingredients: olive oil, white vinegar, salt, cinnamon, grill spice mix, black pepper, and mixed spices.
- Mix the meat with the ingredients well, then refrigerate the meat for at least two hours.
- You can prepare the meat a day ahead and keep it in the refrigerator until use — this is better so the meat absorbs all the flavors and the ingredients blend well.
- Remove the meat from the refrigerator some time before using it.
- Thread the marinated meat pieces onto skewers, placing a piece of onion, a piece of tomato, and a piece of pepper between each meat piece.
- Grill the meat over charcoal on all sides until cooked.
