- Fresh large fish (quantity as desired)
- 1 head garlic, mashed
- A bunch of fresh cilantro
- A pinch of dried coriander
- A pinch of salt
- A pinch of cumin
- A pinch of red chili
- 1 cup tahini
- 2 cups water
- Juice of 2 lemons

Method
- Fry the fish and set it aside..
- In a wide tray, sauté the crushed garlic and fresh cilantro (quantity as desired), then add a pinch of dried coriander and hot chili, cooked or ground...
- We will have previously prepared a cup of tahini with two cups of water and the juice of 2 lemons... mix the ingredients together, adding the spices we choose and a pinch of salt, then pour them over the garlic and cilantro... Arrange the fish pieces in the tray over the coriander, garlic, and tahini mixture, then place the tray over low heat...for about a quarter of an hour only.. We do not want to leave it on the heat too long so it does not become too thick...
