Ingredients

  • Lamb, cut into medium pieces (amount to taste)
  • Ghee (clarified butter)
  • Black pepper
  • Salt
  • Green zucchini, peeled and seeded
  • Onion
  • Tomatoes
  • Tomato paste

Method

  1. In a pot... sauté the meat cut into medium pieces in ghee until browned... sprinkle with pepper and salt and stir
  2. Add the chopped onion to taste and cook until softened
  3. Add the green zucchini after removing the outer skin and seeds and cutting it medium-sized
  4. Leave them for 15 minutes over medium heat
    Timers: 15 min
  5. Finally add the chopped tomatoes with tomato paste and a little water, adjust the salt, and simmer for about half an hour over low heat
  6. Transfer them to a baking tray, cover, and place in the oven at moderate heat until the stew is cooked and the sauce thickens
  7. Serve the green zucchini with meat and tomatoes with rice and toasted vermicelli
