Ingredients

  • 1 kg fresh green beans
  • 2 medium onions, dry
  • 3 garlic cloves
  • Vegetable oil + olive oil
  • 5 tomatoes, crushed
  • 1 tablespoon tomato paste or tomato purée
  • Salt

Method

  1. Trim the strings from both sides of the green beans, then cut them with a knife or break them by hand into medium or small pieces. Wash them very well and leave aside to drain.
  2. Fry the finely chopped onion in oil, add the garlic and sauté until softened.
  3. Add the drained green beans and salt, stir, then cover and cook over medium heat until tender, stirring occasionally.
  4. When the green beans are cooked, add the crushed tomatoes and the tablespoon of tomato purée and simmer until the tomatoes are cooked.
  5. Serve the green beans warm, slightly warm, or chilled from the refrigerator with raw white onion and green bell pepper.
