Grilled Greek chicken, or souvlaki, served with the classic Greek yogurt sauce tzatziki — from Greece to your kitchen. It’s lovely to explore familiar ingredients prepared in new ways.
Ingredients
- 1 kg boneless chicken breasts
- Tortilla or flatbread, to serve
- Chopped lettuce
- Sliced tomatoes
- Chicken Souvlaki Marinade:
- Salt, to taste
- White pepper
- Seven-spice mix (baharat)
- Dried oregano or thyme
- Sweet paprika
- Crushed garlic
- Juice of 2 lemons
- Olive oil
- Tzatziki (Yogurt Sauce):
- 2 cups plain yogurt (Greek-style if possible)
- Finely grated cucumber (well drained)
- 1 garlic clove, finely minced
- 2 tablespoons olive oil
- How to make tzatziki:
- Grate the cucumber and squeeze out as much liquid as possible; excess moisture will make the sauce runny.
Method
- Rinse and pat the chicken dry, then cut into medium pieces similar to tawook cubes.
- Let the pieces drain briefly, then mix all the marinade ingredients and coat the chicken evenly.
- Marinate in the refrigerator for at least 3 hours.Timers: 180 min
- Grill the chicken over charcoal or bake/roast in the oven.
- After grilling, assemble sandwiches: spread a generous spoonful of tzatziki on the bread, add lettuce and tomato, then top with the grilled chicken pieces.
- Roll the sandwich and serve the Greek souvlaki with tzatziki.
- Mix the cucumber with the yogurt, garlic and olive oil; season with salt. Serve with the grilled chicken.
