- Onion, sliced into rings or wedges
- Vegetable oil
- A pinch of garlic powder
- A pinch of ginger
- Salt to taste
- A pinch of black pepper
- A pinch of white pepper
- Lemon juice
- 3 tablespoons tahini
- Water as needed
- A pinch of fine hot pepper (chili)
- Cherry or small tomatoes
- 1/4 cup pine nuts
- To prepare the rice:
- 2 cups rice
- 1 large dry onion
- Chicken stock or plain water, as desired
- 1 teaspoon curry
- A pinch of annatto or turmeric
- A pinch of black pepper

Method
- In the same skillet, fry the onion until it turns golden. Whisk the tahini with water, lemon juice, and salt, then pour the sauce over the onion. Add the spices and stir. When the sauce thickens slightly, add the pine nuts and tomatoes.
- In another pot, sauté a chopped onion in a little oil until golden. Add the chicken stock.
- Let the broth boil until the onion softens. Add curry, a pinch of annatto or turmeric, black pepper, and salt. Add the rice and let it simmer over low heat until cooked.
- Meanwhile, season the fish with salt and black pepper, cut into pieces, then fry it in hot, abundant oil.
- Serve the fried fish pieces alongside the yellow rice and the tajine.
