Method
- Wash the chicken well with salt and tahini and place it in a deep pot, cover with water, and boil it. When the white foam appears, discard the water and add fresh clean water, then add all the chicken boiling spices: nutmeg, cinnamon, cardamom pods, and onion.
- Wash the freekeh grains well and leave them soaking in water for one hour.
- Chop the onion and fry it well until it softens. Add the freekeh over the fried onion with a pinch of salt.
- Pour the chicken cooking liquid over the onion and freekeh and bring the mixture to a good boil. Add the boneless pieces of chicken and reduce the heat until all the ingredients are cooked.
