Ingredients
- Fish fillets
- Flour for coating the fish
- Butter for frying the fish
- Lemon zest
- 1 teaspoon salt
- A pinch of black pepper
- 1 tablespoon curry powder
- 1/4 tablespoon turmeric or a pinch of saffron
- A pinch of ground ginger or 1/4 teaspoon fresh grated ginger
- 1 cup cooking cream
- 1/2 cup water
- 1 green pepper, sliced
- 2 onions, sliced
- Mushrooms, half a can
- 4 garlic cloves
- Yellow rice:
- Rice
- Ghee or clarified butter
- A pinch of ground ginger
- A pinch of curry powder
- A pinch of turmeric
- A pinch of fish seasoning
- Salt
- How to make the yellow rice:
- Sauté the rice in ghee with a pinch of ginger, curry, turmeric, fish seasoning and salt.

Method
- Dredge the fish fillet pieces in flour on all sides, then fry them in butter with lemon zest and spices.
- Remove the pieces from the pan; in the same pan, add the onion and cook until softened, then add the green pepper and the rest of the chopped vegetables and sauté over medium heat.
- When the vegetables have softened, add the cream, lemon, and water, and after it comes to a boil, simmer for about 10 minutes.
- Serve the fish tajine with sour cream alongside yellow rice.
- Sauté the rice in ghee with a pinch of ginger, curry, turmeric, fish spice, and salt.
- Use water at a rate of 1½ cups for each cup of rice.
- When the water boils and comes up to the level of the rice, reduce the heat, cover the pot, and leave it on low heat until the rice is cooked.
