Sour-cream fish tajine — an inventive, standout recipe we recommend trying; you won’t regret it.

Ingredients:

Fish fillets Flour for coating the fish Butter for frying the fish Lemon zest 1 teaspoon salt A pinch of black pepper 1 tablespoon curry powder 1/4 tablespoon turmeric or a pinch of saffron A pinch of ground ginger or 1/4 teaspoon fresh grated ginger 1 cup cooking cream 1/2 cup water 1 green pepper, sliced 2 onions, sliced Mushrooms, half a can 4 garlic cloves Yellow rice: Rice Ghee or clarified butter A pinch of ground ginger A pinch of curry powder A pinch of turmeric A pinch of fish seasoning Salt

Method:

Coat the fish fillet pieces in flour on all sides, then fry them in butter with the lemon zest and spices.
Remove the fillets from the pan... in the same pan, sauté the onions until soft, then add the green pepper and the rest of the chopped vegetables and stir over medium heat.
When the vegetables soften, add the cream, lemon (juice or more zest as desired) and the water, and after it reaches a boil, leave it for about 10 minutes.
Serve the fish tajine with sour cream alongside the yellow rice.

How to make the yellow rice:

Sauté the rice in ghee with a pinch of ginger, curry, turmeric, fish seasoning and salt.
Add water at a ratio of 1 1/2 cups of water for each cup of rice.
When the water boils and reaches the level of the rice... reduce the heat, cover the pot and leave it on low heat until the rice is cooked.
