Ingredients
- 110 g butter at room temperature
- 2 eggs
- 1 cup powdered sugar
- 1 cup flour
- 1 tsp lemon zest
- 1 tsp vanilla
- 1 tsp baking powder
- 1 cup mixed dried fruit

Method
- First, preheat the oven to 180°C before you begin making the cake batter
- Beat the butter with the sugar in an electric mixer
- When the mixture turns pale, add one egg and beat
- Add the vanilla, lemon zest, baking powder, and the second egg, and beat again
- Add 1 cup of flour and beat; you will notice the cake mixture is slightly thicker than usual
- Add the dried fruit and fold in with a spoon
- Line the pan with parchment paper and pour the English fruit cake batter into it; typically a rectangular pan is used for this cake
- Put the pan into the hot oven for 40 minutes; before switching off the heat, test the cake's doneness with a small wooden skewer or fork — it should come out dryTimers: 40 min
