English fruit cake with dried fruit — delicious and loved by many

Ingredients

  • 110 g butter at room temperature
  • 2 eggs
  • 1 cup powdered sugar
  • 1 cup flour
  • 1 tsp lemon zest
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 cup mixed dried fruit

Method

  1. First, preheat the oven to 180°C before you begin making the cake batter
  2. Beat the butter with the sugar in an electric mixer
  3. When the mixture turns pale, add one egg and beat
  4. Add the vanilla, lemon zest, baking powder, and the second egg, and beat again
  5. Add 1 cup of flour and beat; you will notice the cake mixture is slightly thicker than usual
  6. Add the dried fruit and fold in with a spoon
  7. Line the pan with parchment paper and pour the English fruit cake batter into it; typically a rectangular pan is used for this cake
  8. Put the pan into the hot oven for 40 minutes; before switching off the heat, test the cake's doneness with a small wooden skewer or fork — it should come out dry
