English almond cookies — a new recipe you’ll love, perfect for guests

Ingredients

  • 250 g butter
  • 120 g powdered sugar
  • 1 whole egg + 1 egg yolk
  • 1 teaspoon vanilla
  • 400 g all-purpose flour
  • 50 g cornstarch
  • 100 g whole almonds
  • For decoration:
  • Chocolate
  • Chopped almonds

Method

  1. Beat the room-temperature butter until the mixture becomes creamy
  2. Add the powdered sugar and beat until the sugar disappears
  3. Add the egg and vanilla and continue beating
  4. Then add the sifted flour with the cornstarch and bring the dough together
  5. Toast the almonds in the oven for 10 to 12 minutes
  6. Roll the dough into small balls, fill each ball with one almond, then shape them by hand into an oval
  7. After finishing, place the almond cookies in a preheated oven for 12 minutes at 180°C
  8. Let the almond cookies cool
  9. Melt chocolate in a double boiler and dip the almond cookies, then place them directly on cupcake liners after shaping them by hand into ovals as well
  10. Decorate the cookies with chopped almonds, chocolate sprinkles (vermicelli), or as desired
