Eggplant Rolls with Ground Meat

- Eggplant, sliced lengthwise into strips
- Vegetable oil
- Finely ground meat
- Finely chopped onion
- 1/2 teaspoon mixed spices
- 1/4 teaspoon sweet spice
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- A pinch of salt
- Grated cheese
- Tomato sauce ingredients:
- 2 1/2 cups crushed tomatoes
- 1 1/2 cups water
- Black pepper and white pepper
- Fresh or dried basil (according to availability)
- 2 cloves crushed garlic
- Finely chopped onion
- 2 tablespoons olive oil
- Sauce preparation method:
- In a pan over the heat, add the oil and sauté the onion and garlic until they soften.

Method
- Start by sprinkling salt and black pepper over the eggplant slices, then brush them with oil...
- Grill the eggplant slices in the oven on both sides until browned. In a pan over medium heat, add 1 tablespoon of oil and fry the onion until translucent.
- Add the ground meat, then the salt, black pepper, mixed spices, cinnamon, and paprika.
- Place 2 tablespoons of the meat filling at one end of an eggplant slice, then roll it into a cylinder. Continue until all the eggplant slices and filling are used up. In a glass baking dish, pour a little tomato sauce, then arrange the eggplant rolls on top.
- Pour the remaining sauce over the eggplant, then add the grated cheese.
- Place the dish or glass baking pan, whichever is available and oven-safe, into the oven for about 20 minutes.Timers: 20 min
