So here is an egg-free anise ka’ak recipe :)

Ingredients

  • 4 cups flour
  • 2 cups chickpea flour
  • 1 teaspoon baking powder
  • 1 teaspoon yeast
  • 1 tablespoon mahlab
  • 1 teaspoon ka’ak spice
  • 150 g butter or oil
  • 2 tablespoons powdered milk
  • 2 tablespoons anise
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon mastic
  • 1 teaspoon fennel

Method

  1. First, boil the anise with the water over low heat until you get a strong anise flavor, then set it aside to cool.
  2. Place all the ingredients in a deep bowl and mix well.
  3. Add the boiled anise water, but only after it has cooled.
  4. Knead the ingredients well with the anise water until you get a uniform but soft dough...
  5. Set the dough aside to rest for 15 minutes.

  6. After the required time has passed, shape the anise ka’ak dough into bracelets or rings.
  7. Place the anise ka’ak rings on a baking tray lined with parchment paper and let them rest for about 10 minutes.
    Timers: 10 min
  8. Put the tray in a preheated oven at 180 degrees for about 10 minutes, or according to your oven's strength.
