Sponge cake... one of the easiest and lightest cakes... and nothing beats it with a cup of tea after a heavy lunch :)

Ingredients

  • 6 eggs
  • Liquid vanilla
  • 1.5 cups sugar or to taste
  • 3/4 cup vegetable oil
  • 1 cup liquid milk
  • 2 tablespoons baking powder
  • 3 cups flour
  • 2 tablespoons cocoa powder

Method

  1. Beat the eggs well with the vanilla using an electric mixer.
  2. Add the sugar gradually and continue beating until you get a thick, creamy mixture.
  3. Add the milk and oil and continue beating.
  4. Sift the flour and baking powder and add them gradually, folding with a wooden spoon or spatula from bottom to top without circular stirring.
  5. Pour three quarters of the batter into a buttered and floured baking pan, and set the remaining portion aside.
  6. Add the cocoa to the reserved portion and stir well.
  7. Pour the cocoa batter over the first portion in the pan.
  8. Place the pan into a preheated oven at 150°C for about one hour; test the cake with a small wooden skewer.
  9. When the cake has cooled, invert it onto a serving plate and serve.
