Ingredients
- A bunch of green spinach, washed and chopped
- 2 green onions, cut into small pieces
- 8 eggs
- 3 tablespoons flour
- 1 teaspoon baking powder
- 3 tablespoons olive oil
- Crushed peanuts (optional)
- Peanuts for garnish
- Black pepper
- Salt
- Tahini sauce:
- Half a cup tahini
- Half a cup water
- 6 tablespoons lemon juice
- 1 clove garlic, crushed
- Salt to taste

- Mix the tahini with the water well, taking care to avoid lumps.

Method
- In a bowl, beat the eggs well, then add the flour and continue beating.
- Add the spinach to the egg mixture and stir, then add the baking powder and crushed peanuts and mix well until combined.
- Place the spinach frittata mixture in a 30 cm diameter baking pan and put it in a preheated oven at 180°C for about 10 minutes.
- When the spinach frittata is cooked, drizzle olive oil on top and lightly brown the surface.
- You can add mushrooms or any other vegetables, cut into small pieces.
- Serve the spinach frittata alongside the tahini sauce.
- Add the salt and crushed garlic and mix all the ingredients one last time.
- You can add more tahini or lemon juice according to taste.
