Ingredients

  • 3 cups white flour
  • 1 cup chickpea flour
  • 1 cup powdered milk
  • 2 cups sugar, or to taste
  • 3 tablespoons baking powder
  • 1 tablespoon turmeric or yellow spice
  • 3 cups water
  • 1/2 cup oil
  • 2 tablespoons yogurt / optional
  • 1 tablespoon tahini to grease the pan
  • Nuts, as desired, for garnish

Method

  1. Mix the liquid ingredients, then add the sugar and whisk well until it dissolves. Add the dry ingredients and mix well until you get a smooth batter.
  2. Grease a baking pan with tahini, pour in the safouf mixture, then decorate the top with nuts. Place the safouf in a preheated oven at 180 degrees.
  3. Place the pan on the middle rack of the oven. Leave the safouf for about 40 minutes until it is cooked through and dry.

  4. Serve the safouf once it has cooled, and enjoy it with a cup of tea or coffee.
