Ingredients

  • 2 cups plain flour
  • 1/2 cup bread flour
  • 2 teaspoons sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon yeast
  • 1 tablespoon baking powder
  • 3 cups water
  • 2 tablespoons cornstarch

Method

  1. Mix all the qatayef batter ingredients and let it rest for half an hour, then heat a wide pan and start cooking the qatayef circles one by one over medium heat.
  2. You can pour the batter into a jug and pour it from there, or scoop it with a deep spoon. It is important that the qatayef batter is loose and not thick.
  3. When the underside of a qatayef disc turns golden, remove it from the pan and set it aside. Cover the qatayef with a clean cloth so it does not become hard.
  4. If you want to fry the qatayef after stuffing them, you can increase the amount of cornstarch, and you should prepare a thick syrup, not a thin one, for dipping the pieces after deep-frying them in oil.
  5. When pouring the qatayef batter into the pan, you should lift your hand as much as possible and keep the jug away from the pan so you get the white ring around the edges of the qatayef discs.
