Recipe story
Namoura is one of the most delicious and easiest Arabic desserts... and it is also among the most popular and beloved desserts. Here is the easy method in detail.
Ingredients
- 3 cups fine semolina or flour frakha
- 1/2 cup melted butter or ghee
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup yogurt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 3 cups syrup, for serving (more or less, as desired)
- almonds for garnish
- butter or tahini for greasing the pan
Method
- Place the fine semolina in a bowl and rub it with the butter or ghee.
- Add the sugar, salt, baking powder, and vanilla, then mix well.
- Meanwhile, add the baking soda to the yogurt and stir them together, then wait until the yogurt begins to form bubbles.
- After that, add the yogurt mixture with the baking soda to the semolina mixture and stir until all the ingredients are well combined.
- Cover the namoura mixture with food-grade plastic wrap and let it rest for 2 hours.Timers: 120 min
- After the resting time, grease a baking tray with a little butter or tahini, spread the namoura mixture evenly, and smooth the surface.
- Using a knife, cut the namoura into squares or as desired, and wet the knife with water before cutting so the mixture does not stick to it. Wet it again whenever needed.
- Decorate with almonds, then place the tray in a preheated oven and bake for 40 to 50 minutes, depending on the oven, over medium heat.Timers: 50 min
- When the edges of the dough turn golden, brown the namoura a little from the top.
- Add the cold syrup over it immediately after removing it from the oven.
- Serve the namoura cold or at room temperature.
