Easy homemade Shaibiyat — for this recipe use ready-made phyllo pastry and the cream filling; it couldn’t be easier.
Ingredients
- Phyllo (baklava) pastry sheets
- Melted butter
- Sugar syrup
- Crushed roasted pistachios
- Cream filling:
- 2 cups milk
- 4 tablespoons cornstarch
- A splash of orange blossom water and rose water
- Dissolve the cornstarch in the cold milk.

Method
- Cut the pastry into squares, and stack about 8 or 10 squares on top of each other.
- Fill them with a little of the previously prepared ashta and fold into a triangle shape.
- Place the easy homemade shaibiyat squares in a baking tray greased with butter or ghee mixed with oil, then baste them with melted butter and put into the oven.
- When the pieces are golden, pour cold sugar syrup over them and garnish with pistachios.
- Let them cool and serve.
- Ashta (cream):
- Dissolve the cornstarch in cold milk.
- Put them in a pot over medium heat and stir until the cream thickens.
- Add orange blossom water and rose water, stir, remove the filling from the heat, then let it cool before using.
