Easy Greek salad — simple and delicious. A perfect salad to serve alongside many dishes.
Ingredients
- 1 cup purslane leaves
- 1 cup cucumber
- 1 cup tomatoes
- 1/2 cup red onion
- 1/2 cup black and green olives
- 1/2 cup cooked whole chickpeas
- 1/2 cup cooked red kidney beans
- 1/2 cup red bell pepper
- 1/2 cup small baby artichokes, cooked
- 1 cup feta or Bulgarian cheese
- toasted bread (toasted toast)
- olive oil
- pinch of salt
- lemon juice
Method
- Wash the vegetables well and cut them into slices or large cubes...
- Mix all the vegetables in the serving bowl or arrange them side-by-side on a large serving plate
- Distribute the feta cheese cubes over the vegetables...
- Prepare the dressing separately by mixing a little olive oil with a pinch of salt and lemon juice...
- Add the toasted, broken-up toast on top of the salad
- Pour the dressing over the Greek salad just before serving...
