Ingredients

  • 1 kilo potatoes
  • 1 bunch cilantro
  • 5 garlic cloves, or less to taste
  • 1 red hot pepper
  • Salt
  • A pinch of black pepper

Method

  1. Peel the potatoes, wash them, and cut them into cubes
  2. Soak them in water with a pinch of salt for just a few minutes
  3. Drain well, then fry them in plenty of hot oil
  4. Set the potatoes aside
  5. Chop the garlic, cilantro, and hot pepper
  6. In a pot over the stove add a little oil and sauté the garlic until soft, then add the hot pepper and cilantro and stir
  7. When the cilantro wilts, add the previously fried potatoes and cook for about 5 minutes with salt and black pepper, then turn off the heat
