Recipe story
Cracked lentil kibbeh in a delicious homemade recipe! This kibbeh is very tasty with olive oil and vegetables served alongside it
Ingredients
- 2 cups yellow cracked lentils
- 2 cups fine bulgur
- 2 medium onions
- Salt
- 1 teaspoon cumin
- A pinch of hot red pepper
- 1 teaspoon turmeric
- Olive oil
- A bunch of parsley
- A few stalks of green onions for garnish
Method
- Boil the lentils until they are very well cooked. While boiling, if the water level drops, add a little boiling water until the mixture turns creamy.
- Place the bulgur in a wide tray, then spread the hot cooked lentils over the bulgur in the tray.
- Let them sit for half an hour.
- Finely chop the onion and sauté it in olive oil until softened.
- Add the onion, parsley, and chopped celery, along with the spices and salt, over the lentils and bulgur, and knead everything together.
- Shape the kibbeh as desired and serve after garnishing with red pepper, green onion, and parsley, or as desired. It is delicious with pickles.
