Recipe story

Cracked lentil kibbeh in a delicious homemade recipe! This kibbeh is very tasty with olive oil and vegetables served alongside it

Ingredients

  • 2 cups yellow cracked lentils
  • 2 cups fine bulgur
  • 2 medium onions
  • Salt
  • 1 teaspoon cumin
  • A pinch of hot red pepper
  • 1 teaspoon turmeric
  • Olive oil
  • A bunch of parsley
  • A few stalks of green onions for garnish

Method

  1. Boil the lentils until they are very well cooked. While boiling, if the water level drops, add a little boiling water until the mixture turns creamy.
  2. Place the bulgur in a wide tray, then spread the hot cooked lentils over the bulgur in the tray.
  3. Let them sit for half an hour.
  4. Finely chop the onion and sauté it in olive oil until softened.
  5. Add the onion, parsley, and chopped celery, along with the spices and salt, over the lentils and bulgur, and knead everything together.
  6. Shape the kibbeh as desired and serve after garnishing with red pepper, green onion, and parsley, or as desired. It is delicious with pickles.
