Coffee bean cookies — as the name suggests, perfect with coffee
Ingredients
- 1/2 cup ghee or vegetable shortening
- 1/2 cup oil
- 3/4 cup powdered sugar
- 3 tablespoons cocoa powder
- 1/2 teaspoon instant coffee (Nescafé)
- 3 cups all-purpose flour

Method
- Beat the margarine and sugar, then add the oil and cocoa; sprinkle in the Nescafé after grinding it by hand until fine, and continue beating.
- Gradually add the flour and continue beating until you have a soft dough.
- Place the coffee cookie dough in the refrigerator for half an hour.
- After that time, cut it into small rounds approximately the size of an olive or slightly larger.
- Using a thin wooden stick or a knife, shape the dough pieces to resemble coffee beans by scoring them with the knife as shown in the picture.
- Place the dough on a baking tray lined with parchment paper.
- Put the tray into an oven at 170°C on the middle rack for 20 minutes until the cookies are cooked.
- Allow the coffee cookies to cool completely at room temperature before serving with coffee.
