A wonderful, easy coconut macaroon recipe that both adults and kids will love. Make these for your children to take to school. You can also adjust the sweetness of the coconut macaroons by decreasing or increasing the amount of sugar to taste.

Ingredients

  • 4 egg whites
  • 1 teaspoon vanilla with lemon zest
  • 1 cup sugar
  • 2 1/2 cups shredded coconut

Method

  1. Beat the egg whites with the vanilla and lemon zest until stiff peaks form.
  2. Continue beating, and while beating, gradually add the sugar until it dissolves into the egg mixture...
  3. Stop beating, add the coconut, and fold it in with a wooden spoon from the bottom up.
  4. Pour the mixture into a pan or pot and place it over the heat. Keep stirring until the mixture is warmed through, making sure not to cook the eggs, so the heat must be very low.
  5. Remove the pot or pan from the heat and set aside until it cools for about half an hour...
  6. After the required time, transfer the mixture to a piping bag. Alternatively, for a simpler and easier method, use a spoon to shape it into circles on a baking tray lined with parchment paper.
  7. Place a candied cherry or a dried cherry in the center of each circle, as desired. Leave enough space between each circle on the tray.
  8. Put the tray in the preheated oven and brown the coconut macaroons on the top and bottom for a short time so they do not become hard.
